Potatoes skins on and cut into qtrs
1tbs olive oil
1 red pepper per person, top cut off and de-seeded
for the cous cous - garlic diced, tomatoes, Italian mixed herbs, fresh basil, tomato puree, salt and pepper
Toss the potatoes in the olive oil and cover with plenty of Paprika plus a pinch of salt and pepper
place on a baking tray and roast for 30mins tossing half way through
prepare cous cous by adding all the ingredients and mixing well, add hot water as per the packet instructions, cover with cling film and leave to absorb water and flavours.
prepare each pepper by cutting off the tops and de-seeding, once the cous cous is ready fill each pepper, place on a baking tray and put them in the oven for 5-10mins. You want to keep the peppers quite firm so that they can stand up and hold the cous cous.
serve one pepper per person with some of the paprika potatoes, salad and some extra cous cous if needed
