Three Bean Chilli
This is a super tasty family meal and packed full with good beans that are high in fibre and lots of other goodness too.
Peeled and boiled potatoes
Colmans Chilli Con carne Mix
1 teaspoon balsamic vinegar
2 teaspoon honey
Good pinch sea salt and black pepper
1 15-ounce cans organic cannelloni beans
1 15-ounce can organic red kidney beans
1 can haricot beans
1 onion diced
1 or 2 garlic cloves
1 x red pepper diced
Start with the roast potatoes, peel, chip and boil them until they are just starting to get soft, drain and allow to sit, cool and let lots of steam off of them. while this is happening, warm up the oven and a deep baking tray with a little oil in it to warm up in the oven.
Prepare the red pepper, onion and garlic. Get the potatoes in the hot oil, toss well to cover in oil and place them in the oil. Times may vary so keep an eye on them but it should take around 40 mins to roast them well.
Fry the onion, red pepper and garlic, I just add the Colemans mix in dry. The oil in the pan and water that comes from the onions and pepper starts to make a paste, add in some chopped tomatoes if the mix gets too dry and starts sticking. Just add little but often of the Colemans spice mix and add in chopped tomatoes. as needed. Add in the beans and combine well. Add in balsamic vinegar and honey, season well and taste. You can in more Colemans Chilli Mix, more honey or season as necessary. Finally add in the coriander and combine.
Serve with the roast potatoes and some fresh spinach on the side. This is a super tasty meal packed full of nutrition and it’s really filling too. This can also be made with left over roast potatoes, maybe from a Sunday Roast?
